How to cook it

    Rinse the rice and simmer in 3/4 cup water, covered, for 12 minutes.

    Soften the chopped onion and diced carrot in a little of the oil for 5 minutes, add the curry powder and 1 cup water and simmer for 10 minutes, then blend or mash smooth.

    Flatten the chicken, dip in the beaten egg, then the breadcrumbs.

    Fry in the rest of the oil for 4 minutes a side until golden and cooked through.

    Slice and serve over the rice with the curry sauce.
